What’s your favourite recipe?

During COVID lockdown, I did a project with my son as part of the digital citizen badge.

We made a video explaining how to make rocky road. We also created a blog to share this with people. It was great fun.

Of course, food is really important and cooking is a life skill. Although it’s not a healthy recipe, I think it’s good to encourage the kids to try cooking. Sweets and cakes are a good way to get the enthusiasm up and foster a love of cooking.

I have a degree in food technology, which is about producing food in a factory. I enjoy traditional family cooking “toad in the hole”, “homemade pizza dough where everyone adds their own toppings”, “chilli con carne in wraps”. We try and eat most of our dinners together as a whole family, and manage this about 6 times a week.

I’m currently on a diet, and I use loseit app to record the calories I’m consuming. My main challenge is not drinking too much beer as this leads to snacking, increased appetite and reduced self control! But I enjoy it, and sometimes it’s just got to be done.

I used this app a few years ago and lost around 10kg, but have gradually put most of it back on so I’m starting again!
